Meet Michelle
Nice to meet you!
Hey there! I’m Michelle, a pharmacist, diabetes blogger, health enthusiast, and mom of two beautiful daughters.
I work as a medical product specialist, where I regularly engage with doctors, dietitians, and pharmacists on topics like diabetes, hypertension, cholesterol, kidney disease, and obesity. Health has always been part of my professional life. But it became deeply personal during my second pregnancy.
I share easy, practical tips to help make blood sugar management feel simpler and less stressful, without giving up carbs.
I was diagnosed with gestational diabetes and, like many, became overwhelmed.
I went extremely low carb, which left me hungry, exhausted, moody, and struggling. I knew this approach wasn’t sustainable.
That’s when I began learning how to enjoy carbs in moderation without spiking blood sugar. Using this balanced approach, I delivered a healthy baby.
By making strategic food and lifestyle choices, I delivered a healthy baby with a normal birth weight.
I thought gestational diabetes was behind me, but it wasn’t.

A short time later, I was diagnosed with prediabetes. Instead of panicking or jumping into extreme diets or medications, I continued applying the same balanced approach I had learned.
I lowered my HbA1c from 5.8 to 5.3 within six months, without medication. I am now prediabetic in remission.
And yes, throughout this journey, I still enjoyed ice cream, cake, pastries, and pasta, just in a smarter, more balanced way.
Over the years, I’ve read extensively on diabetes and obesity, had countless discussions with medical professionals, attended conferences, and continuously fact-checked what truly works in real life.
I simplify my medical knowledge, personal experience, and practical testing, into clear, easy-to-understand guidance that any beginner can follow.
Today, I run a health and wellness blog focused on diabetic-friendly food lists and meal plans.
My mission is simple: to help people regain a sense of peace, confidence, and freedom around food, even with diabetes.
If you’re feeling confused, scared, or tired of extreme rules, you’re in the right place. I’m here to show you that managing blood sugar can be simple, realistic, and stress-free.

Welcome to Apple and Mint!
